Very often difficult to identify the difference between legend and reality, because of the many populations that have followed each other in the dominations of our beautiful regional territory.
One thing is certain: all of them, in one way or another, have contributed to the gastronomic heritage of the region!
The cannoli should peep out at the domination of the Arabs between 827 and 1091, in Caltanissetta, the city where most of the harems of the emirs lived, in which women loved to spend time preparing sweets of all kinds. A story would make “particular” references to some experiments that would have led to highlight some “qualities” of the sultan in fact.
Yet other stories would trace the birth of the cannoli to the nuns, of the same historical moment of which we spoke above, who inside a convent and for Carnival, tested a new confectionery product with sugar and fresh sheep ricotta.
One thing is certain: being the mix of sugar and ricotta an Arab “invention”, their skill as confectioners is undisputed.
According to gastronomy scholar Alberto Denti from Pirajno, the true story would include both versions.
According to him, when the harems emptied, one of the women converted to Christianity and locked herself in a convent. It was she who modified some recipes that led to the creation of the cannoli as we know it today.
